“Because my great-grandfather André was a joiner in the small town of Abainville in the Meuse. Because my grandfather Serge passed on some of his skills. Because I grew up alongside this grandfather who taught me so much and with whom I had the chance to work with wood. Because the world of the joiner represents craftsmanship, work by hand, authentic work, precision and talent.
L’Établi is a bar-restaurant that pays close attention to the product and its history, offering a warm and welcoming atmosphere based on the theme of craftsmanship and sharing.
We want to work with local producers and independent craftsmen. That’s why all our draught beers come from within a 300km radius. Our wine selection is geared towards winemakers who take a modern and responsible approach to their vine-growing and winemaking processes. Our cuisine is fresh, seasonal, entirely home-made and sourced from local producers who respect their land and their produce.”
